A barman is a person who makes a cocktail. A mixologist is one of those wankers who tosses bottles around like Tom Cruise in "Cocktail".
I think they're trying to differentiate themselves from what a lot of people see a barman as: Unskilled labour.

I don't mind pretentious, but ludicrously enhanced job titles are a step too far. Like when our photopying staff became "reprograhics operatives". It sounds desperate to me.
