Closed to the meat.

So, in an effort to do something about my cholesterol I'm thinking about how to reduce my meat, dairy and egg intake as much as I can. To this end:

Dear Lazyweb,

Where is a good place for a life-long carnivore to find a gentle introduction to meat-free/vegan cooking?

Any thoughts, suggestions, etc. would be much appreciated.
Hehe, I actually got the same video posted where I asked this on Facebook. :) Most awesome.

I think I'm interested in learning how to create a balanced meal without animal protein, and vegetarian / vegan recipes have a variety of ways of solving this problem beyond the "add beans" approach I take now. :)

Certainly more veg side dishes isn't a bad thing either, but I'd like to learn how I can adapt what I like eating now, too.
We've had a dalliance with quinoa previously, needs to be further explored to make it a little more... interesting :)

PB very much for the win, obv. :)
